Chocolate Cookies [From WheatFree Heaven]

These cookies are not good for your health, but they are definitely good for your chocolate loving soul.  They are crispy on the outside and chewy through the middle- topped with ice cream and strawberries (or dipped in nut milk), they cannot be beat!


The Wet:
1 C chocolate Chips
1/4C Margarine
2 Eggs
1 C Brown Sugar
2T Corn Syrup
1t Vanilla
1t instant coffee mixed with 1T of warm water

The Dry:
1-3/4 C Flour (I used brown rice for 1 and 3/4C of Spelt)
3/4C Icing Sugar
1/3C Cocoa
2t Baking Powder
1/2 C chocolate Chips (optional- but they are a million times better with)
1/2C chopped pecans (or whatever nut, event coconut is) (optional)


  1. Preheat oven to 350 degrees
  2. Melt 1C of chocolate chips with 1/4C of margarine.  Still in remaining wet ingredients
  3. Mix together all of the dry ingredients in a separate bowl.  Add the wet to the dry and mix until it’s all blended together.
  4. Bake for 12 minutes at 350- put them on a cooling rack and enjoy (let them sit for 2 minutes to harden before diving straight in- you’ll have more success)
