1 block of firm or extra firm tofu
1 head of broccoli
5 mushrooms, sliced
1 garlic clove, mined
2T mild curry paste
Salt and Pepper to taste
- Start with the garlic and onion- heat about 2T of olive oil in a large saucepan and toss in the garlic and onion and cook it until it’s translucent.
- Add in the tofu, broccoli and mushrooms and spices, saute on medium heat. You may need to add a bit of water if it starts to get dry (I did).
- Splash on 2T of soy sauce and continue cooking for 5-10 minutes, and just like that it’s done.
I served mine up on salad, you could have it with rice, or toast- just about anything goes here- super easy and delicious- enjoy it!
