This recipe is stupid easy.  All you really need is a block of tofu and some onion, garlic and spices to make it work- adding veggies is just a bonus!


1 block of firm or extra firm tofu
1 head of broccoli
5 mushrooms, sliced
1 onion
1 garlic clove, mined
2T mild curry paste
1t tumeric
Salt and Pepper to taste


  1. Start with the garlic and onion- heat about 2T of olive oil in a large saucepan and toss in the garlic and onion and cook it until it’s translucent.
  2. Add in the tofu, broccoli and mushrooms and spices, saute on medium heat.  You may need to add a bit of water if it starts to get dry (I did).
  3. Splash on 2T of soy sauce and continue cooking for 5-10 minutes, and just like that it’s done.

I served mine up on salad, you could have it with rice, or toast- just about anything goes here- super easy and delicious- enjoy it!
